LIME CHICKEN CRISPY TACOS

We all have a good story around this recipe of “Lime Chicken Crispy Tacos,” as it is a family FAVORITE! I have fiddled with this recipe, and I am sure you will too. Use it as a general guide and experiment with your favorite taco-type ingredients.  Keep the recipe around, and when you find yourself being less than enthusiastic about making dinner, or your kids start ordering pizza – break out the tacos, follow the directions and come home to a classic.  The simpler you keep them, the more the lime comes through – which is kind of the point behind the name…


Ingredients

  • 2 pounds boneless, skinless Chicken Breast, chopped into approximately 2 inch by 1 inch pieces.

  • ⅛ cup  Red Wine Vinegar

  • 1 Lime, juiced, more if you like to taste.

  • 1 teaspoon Sugar

  • 1 teaspoon Salt

  • ½ teaspoon Black Pepper

  • 2 Green Onions, chopped small

  • 2 cloves Garlic, minced

  • 1 teaspoon Ground Oregano

  • 1 cup chicken broth, optional

  • 12 Corn tortillas, 6 inch

  • 2-3 cups Canola Oil

  • 1 large Red Tomato, chopped medium

  • 2 cups Iceburg Lettuce, sliced in long shreds

  • 1 cup Monterey Cheese, grated

  • 1 cup Cheddar Cheese, grated

  • 2 cups Salsa, your favorite brand

Directions

Step 1

The chicken will be much easier to cut into small pieces if it is partly frozen.  Sauté chicken in a medium saucepan over medium high heat for about 20 minutes. Add vinegar, lime juice, sugar, salt, pepper, garlic and oregano.  If it looks a little dry, splash in some of the chicken broth.  Simmer for an extra 10 minutes.  Add the chopped green onions just before serving.

Step 2

Heat an iron skillet over medium high heat.  Put enough canola oil in the pan to cover it to about 1 quarter inch.  When the oil is fully hot place 2 -3 tortillas in the oil and flip each one over a couple of times until they begin to crisp up – but not so crisp that you can still kind of bend them.  As you complete them, place them on a plate covered with a couple of paper towels.  Repeat with remaining tortillas. Serve lime chicken mixture in warm, crispy tortillas topped with tomato, lettuce, cheese and salsa.
